Mojito Preparation

Muddle Mint and Sugar
In a sturdy glass or cocktail shaker, add the fresh mint leaves and demerara sugar. Using a muddler or the back of a spoon, gently press the mint leaves to release their oils, while mixing in the sugar until well combined.

Add Lime Juice and Rum
Pour in the fresh lime juice and light rum over the muddled mint and sugar mixture. Stir gently to combine and dissolve the sugar.

Add Bitters
Add 2 dashes of aromatic bitters to the mixture. This will give the mojito a more complex flavor. Stir gently to incorporate.

Garnish and Serve
Garnish with a sprig of fresh mint and a lime wedge if desired. Serve immediately with a straw.
