Preparation

  1. 1

    Prepare the Pineapple

Cut the pineapple in half lengthwise. Carefully scoop out the inside of the pineapple, leaving a shell for serving. Chop the scooped-out pineapple into small pieces and set aside.

  2. 2

    Juice the Limes

Cut the limes in half and juice them using a citrus juicer or by hand until you have about 1/2 cup of fresh lime juice.

Mixing

  1. 3

    Combine Ingredients

In a large pitcher, combine the chopped pineapple, light rum, coconut rum, fresh lime juice, and simple syrup. Stir well to mix all ingredients thoroughly.

  2. 4

    Chill the Mixture

Cover the pitcher and refrigerate the mixture for at least 30 minutes to allow the flavors to meld.

Serving

  1. 5

    Prepare the Glasses

Take the pineapple shells out of the refrigerator. Fill each shell with the chilled mixture.

  2. 6

    Garnish and Serve

Garnish each filled pineapple shell with a few mint leaves and a pineapple wedge on the rim. Serve immediately with a straw.
