Method

Making the Pasta Dough

  1. 1

    Mixing Ingredients

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs and add olive oil.

  2. 2

    Kneading the Dough

Using a fork, beat the eggs gently and gradually incorporate the flour until the mixture becomes too stiff to mix. Then, use your hands to knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.

  3. 3

    Resting the Dough

Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.

Preparing the Sauce

  1. 4

    Sautéing Garlic

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 5

    Cooking Tomatoes

Add the cherry tomatoes to the skillet and cook until they start to burst and soften, about 5-7 minutes. Season with salt and black pepper to taste.

  3. 6

    Finishing the Sauce

Remove the skillet from heat and stir in chopped fresh basil. Set aside while preparing the pasta.

Cooking the Pasta

  1. 7

    Rolling Out the Dough

After resting, divide the dough into four pieces. Roll each piece out into thin sheets using a pasta machine or a rolling pin, dusting with flour as needed.

  2. 8

    Cutting the Pasta

Using a chitarra or a sharp knife, cut the rolled-out dough into spaghetti strips. Dust the cuts with flour to prevent sticking.

  3. 9

    Cooking the Pasta

Bring a large pot of salted water to a boil. Cook the spaghetti for about 3-4 minutes until al dente. Drain and reserve a little pasta water.

Combining and Serving

  1. 10

    Combining Pasta and Sauce

In the skillet with the sauce, add the drained spaghetti and toss to combine. If the sauce is too thick, add a little reserved pasta water to loosen it.

  2. 11

    Serving

Serve the spaghetti hot, topped with grated Parmesan cheese and additional fresh basil if desired.
