Making the Pasta Dough

Prepare the Dough
On a clean surface or in a large bowl, make a mound with the flour. Create a well in the center and crack the eggs into the well. Add the salt and olive oil.

Knead the Dough
Once the dough is roughly combined, knead it with your hands for about 8-10 minutes until it becomes smooth and elastic. If too sticky, sprinkle with a little more flour.

Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
Rolling and Cutting the Pasta

Roll Out the Dough
Divide the rested dough into four equal pieces. Keep the pieces you are not using covered. Flatten one piece slightly, then use a pasta machine or rolling pin to roll it out to your desired thickness (about 1/16 inch is ideal).

Cut the Spaghetti
Using a sharp knife or a pasta cutter, cut the rolled-out dough into long strips to form spaghetti. Dust the cut pasta with flour to prevent sticking.

Repeat the rolling and cutting process with the remaining pieces of dough.
Cooking the Pasta

Bring a large pot of salted water to a boil.

Add the spaghetti to the boiling water and cook for 3-4 minutes or until al dente. Fresh pasta cooks faster than dried pasta.
