Mix the Spice Rub
In a small bowl, combine paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well and set aside.
Prepare the Chicken

Marinate the Chicken
In a bowl, pour buttermilk over the boneless chicken thighs. Add half of the spice rub to the buttermilk and mix well. Cover and refrigerate for at least 1 hour, or overnight for best results.

Once marinated, remove chicken from the buttermilk and let excess liquid drip off. Dredge each piece in all-purpose flour, ensuring they are fully coated.

Fry the Chicken
Carefully place the coated chicken thighs in the hot oil. Fry in batches for about 5-7 minutes per side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).

Drain the Chicken
Remove the fried chicken from the oil and place on a paper towel-lined plate to drain excess oil.

In a mixing bowl, combine mayonnaise, minced garlic cloves, grated parmesan cheese, lemon juice, salt, and black pepper. Whisk until smooth and creamy. Adjust seasoning to taste.
Assemble the Sandwich

Build the Sandwich
On the bottom half of each burger bun, spread a generous layer of parmesan-garlic aioli. Top with a piece of fried chicken, a few semi-dried tomatoes, and a handful of fresh lettuce. Finish with the top half of the bun.

Serve the fried chicken sandwiches immediately, with extra aioli on the side if desired.
