Method

Cake Layers

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C) and grease and flour five 8-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Combine Wet Ingredients

In another bowl, whisk together the eggs, milk, oil, and vanilla extract until well combined.

  4. 4

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Gradually add the boiling water and mix until smooth.

  5. 5

    Bake Cake Layers

Divide the batter evenly among the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool Layers

Remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Whipped Chocolate Ganache

  1. 7

    Heat Cream

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

  2. 8

    Melt Chocolate

Remove from heat and add the chocolate chips, stirring until completely melted and smooth.

  3. 9

    Chill Ganache

Allow the ganache to cool to room temperature, then refrigerate for 1 hour or until thickened.

  4. 10

    Whip Ganache

Using a hand mixer or stand mixer, whip the ganache until it becomes light and fluffy.

Chocolate Caramel Sauce

  1. 11

    Melt Sugar

In a medium saucepan, heat the sugar over medium heat, stirring constantly until it melts and turns a deep amber color.

  2. 12

    Add Butter

Carefully add the butter and stir until melted and combined.

  3. 13

    Add Cream and Cocoa

Slowly add the heavy cream and cocoa powder, stirring until smooth and fully combined.

  4. 14

    Cool Sauce

Remove from heat and let the caramel sauce cool before using.

Assembly

  1. 15

    Layer the Cakes

Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of whipped ganache on top.

  2. 16

    Repeat Layers

Repeat the process for the next four layers, stacking them on top of each other.

  3. 17

    Top with Ganache

Spread the remaining whipped ganache over the top and sides of the cake.

  4. 18

    Drizzle with Caramel

Drizzle the chocolate caramel sauce over the top of the cake.

  5. 19

    Add Chocolate Pearls

Finish by decorating the top with chocolate pearls.
