Prepare the Apples
Wash the apples thoroughly to remove any pesticides or wax. Quarter the apples and remove the seeds. There is no need to peel the apples.

Extract the Juice
Place the quartered apples into a juicer or a blender. If using a blender, blend until smooth and then strain the mixture through a fine mesh strainer or cheesecloth to extract the juice. Collect the juice in a large bowl.

In a fermentation vessel, combine the apple juice with the granulated sugar and water. Stir well until the sugar is completely dissolved.

Add Yeast
Sprinkle the yeast over the surface of the mixture. Allow it to sit for about 10 minutes, then stir gently to incorporate.

If using, add the cinnamon sticks, cloves, and vanilla extract to the mixture. Stir well to combine.

Seal the fermentation vessel with an airlock or cover it with a clean cloth secured with a rubber band. Place it in a cool, dark area with a stable temperature (around 60-70°F / 15-21°C) for fermentation.

Once fermentation has slowed (about 3-4 weeks), it’s time to bottle the cider. Siphon the cider into clean, sterilized bottles, leaving about an inch of headspace at the top.
