Bruschetta

    Prepare the Bruschetta

    Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices and arrange them on a baking sheet. Brush each slice lightly with olive oil and sprinkle with salt and black pepper.

    Bake the Bread

    Bake the bread slices in the preheated oven for about 10 minutes, or until they are golden brown and crispy. Set aside to cool.

    Add Garlic

    Rub the warm toasted bread with a halved garlic clove for added flavor.

Fontina Aioli

    Make the Aioli

    In a bowl, whisk together egg yolk and Dijon mustard. Gradually add olive oil while whisking continuously until the mixture emulsifies and thickens.

    Incorporate Cheese and Flavor

    Stir in the grated Fontina cheese, lemon juice, and salt. Mix until smooth and creamy. Set aside.

Giardiniera

    Prepare Vegetables

    In a large bowl, combine cauliflower, diced carrots, and diced bell peppers.

    Create Marinade

    In a separate bowl, whisk together olive oil, red wine vinegar, oregano, and salt. Pour this mixture over the vegetables.

    Marinate

    Toss well to coat the vegetables and let them marinate for at least 1 hour in the refrigerator.

Charred Greens

    Sauté the Greens

    In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 30 seconds.

    Add Greens

    Add the kale or Swiss chard to the skillet. Season with salt and sauté until the greens are wilted and charred, about 4-5 minutes.

    Set Aside

    Remove from heat and set aside.

Steak

    Season the Steak

    Season both sides of the bar steaks with salt and black pepper.

    Cook the Steak

    Heat olive oil in a grill or skillet over medium-high heat. Cook the steaks for about 4-5 minutes on each side, or until desired doneness.

    Rest the Steak

    Once cooked, remove from heat and let the steaks rest for a few minutes before slicing.
