Pasta Dough Preparation

    Combine Dry Ingredients

    In a large mixing bowl, combine all-purpose flour, semolina flour, and salt. Mix well until evenly combined.

    Add Eggs

    Make a well in the center of the flour mixture and crack the eggs into the well. Start mixing the flour into the eggs with a fork until it begins to form a dough.

    Knead the Dough

    Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. If the dough is too dry, add water a tablespoon at a time.

    Rest the Dough

    Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Orecchiette Formation

    Roll and Cut the Dough

    After resting, divide the dough into quarters. Roll out one quarter into a thin sheet, about 1/8 inch thick. Use a knife or pasta cutter to cut it into small squares (about 1 inch).

    Take each square and use your thumb to press down in the center to form a small cup-like shape. This creates the characteristic orecchiette shape.
