Method
Pasta Dough Preparation
- 1
Combine Dry Ingredients
In a large mixing bowl, combine all-purpose flour, semolina flour, and salt. Mix well until evenly combined.
- 2
- 3
Knead the Dough
Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. If the dough is too dry, add water a tablespoon at a time.
- 4
Rest the Dough
Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
Orecchiette Formation
- 5
Roll and Cut the Dough
After resting, divide the dough into quarters. Roll out one quarter into a thin sheet, about 1/8 inch thick. Use a knife or pasta cutter to cut it into small squares (about 1 inch).
- 6
Shape Orecchiette
Take each square and use your thumb to press down in the center to form a small cup-like shape. This creates the characteristic orecchiette shape.
Cooking Orecchiette
- 7
Boil Water
Bring a large pot of salted water to a boil over high heat.
- 8
Cook Orecchiette
Add the shaped orecchiette to the boiling water and cook for 3-5 minutes, or until they float to the surface and are tender.
- 9
Drain Pasta
Once cooked, drain the orecchiette and set aside.
Sauce Preparation
- 10
Sauté Garlic
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
- 11
Add Cherry Tomatoes
Add the cherry tomatoes to the skillet and cook until they start to burst and release their juices, about 5-7 minutes.
- 12
Combine with Orecchiette
Add the drained orecchiette to the skillet, along with fresh basil, salt, and black pepper. Toss everything together until well combined and heated through.
- 13
Serve
Plate the orecchiette and top with grated Parmesan cheese before serving.
