Prepare dry ingredients

Whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt in a medium bowl until evenly combined and aerated.

Combine wet ingredients

In a separate bowl, beat the large egg lightly. Add the whole milk, melted butter, and vanilla extract and whisk until homogeneous.

Make the batter

Pour the wet mixture into the dry ingredients. Stir gently with a spatula or wooden spoon just until no large streaks of flour remain. Do not overmix; a few small lumps are fine. Let the batter rest for 5 minutes to hydrate the flour and allow baking powder to begin working.

Adjust consistency (if needed)

If the batter seems very thick (like a stiff paste), add up to 2 tablespoons more milk to reach a thick but pourable consistency. If too thin, sprinkle in up to 1 tablespoon flour and fold once.

Heat a nonstick skillet or griddle over medium heat for 3–4 minutes until hot but not smoking. Brush the surface lightly with the 1 tablespoon unsalted butter and wipe away any excess with a paper towel so the pan is coated thinly.

For each pancake (or portion of Model 'A'), pour about 1/4 cup of batter onto the hot surface, leaving space between. Cook until bubbles form on the surface and edges look set, about 2–3 minutes.

Flip carefully with a spatula and cook the second side until golden brown and cooked through, about 1–2 minutes more. Repeat with remaining batter, adding a little butter to the pan between batches if needed.

Keep cooked pancakes warm in a low oven (90–100°C / 200°F) on a baking sheet while finishing the rest.

Just before serving, melt 2 tablespoons maple syrup or honey with 1 tablespoon unsalted butter in a small saucepan over low heat or in a microwave-safe bowl for 15–20 seconds. Stir until combined.

Stack pancakes on plates, spoon the warm butter-maple mixture over them, top with fresh berries or sliced fruit, and dust lightly with powdered sugar if using. Serve immediately.
