Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are glowing and covered in ash.
3. Grill the Lamb
Remove the lamb from the marinade and let any excess marinade drip off. Place the lamb on the grill and cook for about 4-6 minutes per side for medium-rare, or until desired doneness is reached. Lamb chops may require less time, about 3-4 minutes per side.
4. Rest and Serve
Once cooked, transfer the lamb to a cutting board and let it rest for 5 minutes. Slice the picanha against the grain and serve with grilled vegetables or a fresh salad.
