Marinate the Lamb
In a large bowl, combine chopped fresh mint, white wine, lemon juice, minced garlic, olive oil, salt, and black pepper. Mix well until combined. Add the lamb picanha or lamb chops to the marinade and ensure they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Grill the Lamb
Remove the lamb from the marinade and let any excess marinade drip off. Place the lamb on the grill and cook for about 4-6 minutes per side for medium-rare, or until desired doneness is reached. Lamb chops may require less time, about 3-4 minutes per side.
Rest and Serve
Once cooked, transfer the lamb to a cutting board and let it rest for 5 minutes. Slice the picanha against the grain and serve with grilled vegetables or a fresh salad.
