6.8% India Pale Ale. Tasting Notes: Fresh Squeezed Clementine Juice, Starfruit, Dried Mango.

Heat 5 gallons of water to 160°F (71°C). Add the pale malt, caramel malt, and flaked corn. Maintain the temperature around 150°F (65°C) for 60 minutes.

Mashing

After mashing, separate the liquid wort from the grains. Sparge with hot water to collect about 6 gallons of wort.

Lautering

Bring the wort to a boil. Once boiling, add Citra hops. After 15 minutes, add Mosaic hops and Amarillo hops. Boil for a total of 60 minutes.

Boiling

Cool the wort down to about 70°F (21°C) using a wort chiller.

Cooling

Transfer the cooled wort to a fermenter and add the yeast. Allow it to ferment for about 2 weeks.

Fermentation

After fermentation, add the clementine juice, diced starfruit, and dried mango. Let it sit for another week.

Flavoring

Bottle the beer and let it carbonate for 1-2 weeks before enjoying.
