In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the pale malt, oats, and caramel malt. Maintain a mash temperature of 152°F (67°C) for 60 minutes.

Mash the Grains

After mashing, sparge the grains and bring the liquid to a boil. Boil for 60 minutes, adding Cascade hops at the start, Citra hops with 15 minutes remaining, and Amarillo hops with 5 minutes remaining.

Boil and Add Hops

Cool the wort to 70°F (21°C) and transfer to a fermentation vessel. Add the American Ale yeast and ferment for 1-2 weeks until fermentation is complete.

Cool and Ferment

During the last few days of fermentation, add the pureed Mirabelle plums, Franken Berry cereal, and orange zest to the fermenter. Let sit for an additional 3-5 days.

Add Flavors

Once fermentation is complete, bottle or keg the beer. Carbonate as desired and let it condition for another week before enjoying.
