Combine and cook

In a small saucepan, combine 1 cup rolled oats, 1.5 cups water and 1 tsp salt. Bring to a gentle boil over medium-high heat, stirring occasionally.

Simmer

Once boiling, reduce heat to low and simmer, stirring every 30 seconds, until oats are tender and most liquid is absorbed, about 6–8 minutes for rolled oats. If you prefer softer oats, simmer up to 10 minutes, adding a splash of water if needed.

Milk Choice & Sweetener

While oats finish cooking, warm 1/2 cup of your chosen milk (dairy, soy, oat or almond) in the microwave or a small pan until steaming but not boiling (about 30–45 seconds in microwave).

When oats are done, remove from heat and stir in the warmed milk and 1 tablespoon brown sugar or maple syrup, if using. Adjust sweetness to taste.

Mix-ins & Toppings

Stir in 2 tbsp dried cranberries and 2 tbsp raisins into the hot oatmeal so they soften slightly and distribute evenly.

Top the oatmeal with 2 tbsp roughly chopped walnuts and optional 1/4 tsp ground cinnamon. Add 1/2 cup fresh fruit if desired.

Taste and adjust: add more milk for creaminess, a pinch of salt for balance, or more sweetener if needed.
