Tea Brew
Bring water to a boil
Bring 12 cups of water to a rolling boil in a large kettle or stockpot.
Steep tea
Remove from heat. Add 8 organic black tea bags and 1 tablespoon of loose peach tea or dried peach pieces (if using) to the hot water. Cover and steep for 8 minutes for a full-bodied brew. For milder tea steep 5–6 minutes.
Remove tea bags
Remove tea bags and discard. If you used loose peach pieces, strain the brew through a fine mesh sieve or cheesecloth into a heatproof pitcher to remove solids.
Cool the tea
Allow the tea to cool at room temperature for 20–30 minutes, then place in the refrigerator to chill or transfer to an ice bath to speed cooling. Chill until around refrigerator-cold (about 45–60 minutes) or proceed once cool to the touch.
Peach Simple Syrup
Make the syrup
Combine 1 cup granulated sugar, 1 cup water, and 2 cups sliced peaches in a medium saucepan over medium heat. Stir to dissolve sugar and bring to a gentle simmer.
Simmer with peaches
Simmer uncovered for 8–10 minutes, mashing some peach slices against the side of the pan with a spoon to release juices and flavor. The mixture should be fragrant and slightly thickened.
Strain and cool
Remove from heat. Strain syrup through a fine mesh sieve, pressing on the peaches to extract as much liquid as possible. Discard solids (or reserve for garnish). Let the syrup cool to room temperature, then chill in the refrigerator until cold (about 30–45 minutes). The syrup yields peach-flavored simple syrup that can be kept refrigerated for up to 7 days.
Assembly & Serving
Sweeten and balance
In a large pitcher, combine the chilled brewed tea and 4 cups of cold water to dilute to desired strength. Stir in 1/2 to 3/4 cup of the chilled peach simple syrup (taste and adjust). Add 2 tablespoons fresh lemon juice to brighten the flavor.
Adjust sweetness
Offer sugar packets or additional simple syrup on the side. For individual servings, add extra syrup or packets to taste.
Serve over ice
Fill each of 8 cups with about 3/4 cup ice (adjust to cup size). Pour the prepared iced peach tea over the ice, leaving a small headspace. Garnish each cup with a fresh peach slice and a sprig of mint if desired.
Optional chilled hold
Keep remaining tea refrigerated and syrup chilled. Stir before serving if separation occurs. Best served within 48 hours.
