Method
Salsa
Pulse/blend to a chunky salsa consistency. Taste and adjust salt or lime. Keep warm or cover and refrigerate if making ahead.
Pintos (Refried-style)
Add 1 minced garlic clove and 1/2 tsp cumin; cook 30 seconds until fragrant.
Add 2 cups cooked pinto beans and 1/4 cup water or reserved bean liquid. Mash with a potato masher or back of a spoon to desired texture, leaving some whole beans for texture.
Cook, stirring, until mixture is thick and heated through, 3–5 minutes. Stir in 1/2 tsp salt and 1/2 tbsp lime juice. Keep warm on low.
Papitas (Crispy Potatoes)
Heat 2 tbsp oil in a large skillet over medium-high heat. When shimmering, add potatoes in a single layer. Don’t overcrowd; cook in batches if necessary.
Season with 1/2 tsp smoked paprika, 1/4 tsp garlic powder, 1/2 tsp salt and 1/4 tsp black pepper. Cook, stirring occasionally, until golden and crisp, 12–15 minutes.
Taste and adjust seasoning. Keep warm in a low oven (200°F / 95°C) while finishing eggs and tortillas.
Tortillas & Eggs
Warm tortillas: heat a dry skillet over medium-high heat. Warm each tortilla 20–30 seconds per side until pliable and slightly browned. Keep wrapped in a clean towel to stay warm. If using corn tortillas, warm longer at slightly lower heat to prevent cracking.
Fry eggs (Over-easy)
In a nonstick skillet, heat 1 tbsp butter or oil over medium. Crack eggs into the skillet, spacing them apart. Season with a pinch of salt and pepper. Cook until whites are set, about 2–3 minutes. Flip gently and cook 20–30 seconds for over-easy yolks (longer for more set yolks). Remove from heat.
Assembly & Cheese
Place 1 warmed tortilla on each plate. Spread about 1/4 cup warm refried pintos onto each tortilla, smoothing into a thin layer.
Top the beans with a generous handful (about 1/2 cup) of papitas per serving, distributing evenly.
Spoon 1/4 to 1/3 cup warm salsa over each egg. Immediately sprinkle about 1/4 cup shredded cheddar-jack over each plate so it melts from the residual heat. If preferred, place plates briefly under a broiler (30–60 seconds) to melt cheese—use caution.
