Egg Filling

Beat eggs

Crack 3 large eggs into a mixing bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until mixture is uniform and slightly frothy.

Cook eggs

Heat a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown. Pour in the egg mixture. Allow eggs to set at the edges for a few seconds, then gently stir with a silicone spatula, folding from the edges to the center. Cook slowly until soft, creamy curds form but eggs are fully set, about 3–4 minutes. Remove from heat just before they look completely dry; carryover heat will finish them.

Cheese & Chile

Combine cheese and chiles with eggs

Immediately after removing the eggs from the heat, stir in 1/2 cup shredded sharp cheddar and 1/4 cup chopped roasted green chiles until the cheese starts to melt and is evenly distributed through the eggs. If you want a spicy kick, stir in up to 1 tablespoon hot salsa or hot sauce to taste.

Prepare meats (if ordering add-ons)

If using bacon: cook 2 slices in a skillet over medium heat until crisp, drain on paper towel and chop. If using sausage: cook 1 breakfast sausage patty fully and chop. If using smoked ham: heat 2 oz thinly sliced ham in the skillet until warmed and slightly browned. If using carne adovada: warm 3 oz in a small pan until hot. Keep warm and set aside.

Incorporate add-ins

Fold the chosen meat (bacon, sausage, ham, or carne adovada) into the egg-cheese mixture or reserve to place on top of the eggs in the tortilla, depending on preference.

Assemble & Finish

Warm tortilla

Lightly brush a second clean skillet or griddle with 1 teaspoon oil or butter and warm it over medium heat. Place the 10–12 inch flour tortilla on the skillet for about 20–30 seconds per side until pliable and lightly toasted. Keep warm.

Assemble burrito

Place the warmed tortilla on a flat surface. Spoon the scrambled egg, cheese, and chile mixture onto the center of the tortilla in a horizontal line, leaving about 2 inches of space on each end. Add the chosen meat add-on on top of the eggs if not already mixed in. Sprinkle optional cilantro if using.

Fold burrito

Fold the short ends of the tortilla over the filling, then fold one long side over and roll tightly to enclose the filling, forming a burrito. Place seam-side down on the warm skillet and press gently for 20–30 seconds to seal and heat through; rotate to brown lightly on both sides if desired.

Serve

Remove the burrito from the skillet, cut in half if desired, and serve immediately with lime wedge and extra salsa or hot sauce on the side.
