Preparation of Potatoes

Cut and Soak Potatoes

Wash and cut the Kennebec potatoes into fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the potatoes and pat them dry. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Make the Gravy

In a saucepan, melt the butter over medium heat. Whisk in the flour to create a roux and cook for 2-3 minutes until golden. Gradually add the beef broth, whisking continuously to prevent lumps. Season with salt and pepper and simmer until thickened, about 5-10 minutes.

Assemble Poutine

On a plate, place a generous serving of fries. Top with cheese curds, bacon bits, and drizzle with hot gravy. Garnish with chopped green onions and serve immediately.
