1. Prepare the Jalapeño Syrup

In a saucepan, combine equal parts sugar and water with sliced jalapeños. Heat until sugar dissolves, then let steep for 30 minutes. Strain and cool.

2. Mango Puree

Blend the mango until smooth. Strain to remove any fibers for a smoother texture.

In a cocktail shaker, combine the mango puree, lemon juice, jalapeño syrup, and egg whites. Dry shake without ice for about 15 seconds to emulsify the egg white.

4. Shake with Ice

Add ice to the shaker and shake vigorously for another 15-20 seconds until well chilled.

Serving

5. Strain and Serve

Strain the mixture into a chilled cocktail glass. Optionally, garnish with a slice of mango or a jalapeño slice.
