Method
Punch Base
Chill container
Place a punch bowl or a large 2–3 quart pitcher/bucket in the refrigerator or fill with ice to chill for 10 minutes before assembling.
Combine spirits and juices
In the chilled punch bowl or a large mixing pitcher, pour in the spiced rum (12 fl oz), clear rum (8 fl oz), pineapple juice (24 fl oz), orange juice (16 fl oz), and fresh lime juice (4 fl oz). Stir gently to combine.
Sweetener & Balance
Add simple syrup (3 fl oz) to the punch and taste. If you prefer less sweetness, start with 2 fl oz and adjust. Add Angostura bitters (up to 6 dashes) one dash at a time to round the flavors—stir and taste after each dash.
Adjust acidity and sweetness as needed: if the punch tastes too tart, add up to 1 fl oz more simple syrup; if too sweet, add another 1/2–1 fl oz fresh lime juice.
Finish & Serve
Float option: gently pour the optional dark/aged rum (2 fl oz) over the back of a spoon onto the surface of the punch for aroma and a visual float, if desired.
Garnish the bowl: scatter the orange wedges and maraschino cherries across the surface and tuck lime wheels around the edge for color and aroma.
Serve: ladle the punch into individual glasses over ice. If you reserved grenadine, drizzle about 1/2 oz into each glass for the classic sunrise look. Garnish each glass with an orange wedge and a maraschino cherry.
Storage note: keep the punch refrigerated or over ice; consume within 6–8 hours for best flavor. If left longer, juices can become more oxidized—stir before serving.
