Prepare glass

Fill a highball or hurricane glass with crushed ice and set aside so the glass is nicely chilled while you build the drink.

Combine ingredients

In a cocktail shaker, add light rum, dark rum, pineapple juice, orange juice, fresh lime juice, simple syrup, and Angostura bitters. Add a handful of ice to the shaker (not crushed) — about 6-8 medium cubes.

Shake

Secure the shaker and shake vigorously for 10–12 seconds until the outside of the shaker is cold and well-chilled.

Layer grenadine

Pour the crushed-ice-filled glass half full of the chilled crushed ice (if the glass is already full, press ice down slightly to make room). Slowly pour the grenadine into the bottom of the glass so it sinks and creates a red base layer.

Strain and serve

Strain the shaken rum-and-juice mixture over the crushed ice on top of the grenadine, pouring gently so you preserve the layered effect. Top with a little more crushed ice if needed and give the drink one gentle stir (about 1 full turn) to marry flavors while keeping layers visible.

Garnish and finish

Garnish with a pineapple wedge and a maraschino cherry on a cocktail pick. Optionally, add a short straw. Serve immediately.
