Prep oysters and marinade

Rinse oysters gently in a colander and drain well. In a medium bowl combine 1 1/2 cups buttermilk and 1 tablespoon hot sauce. Add oysters, stir gently to coat, cover, and refrigerate for 20–30 minutes. This will tenderize and season the oysters.

Heat oil

While oysters marinate, pour about 3–4 inches of vegetable oil into a heavy pot or deep fryer (approximately 4 cups in a 4–6 quart pot). Heat oil to 350°F (175°C). If you don't have a thermometer, a cube of bread should brown in about 60 seconds at the right temperature.

Make dredging mixture

In a shallow bowl or plate whisk together 1 cup all-purpose flour, 1/2 cup cornmeal, 1/2 cup panko (if using), 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon cayenne, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Make sure mixture is evenly combined.

Dredge oysters

Working in batches to avoid overcrowding the oil, remove a portion of oysters from the buttermilk (let excess drip back into the bowl), then toss gently in the flour-cornmeal mixture until fully coated. For an extra-crispy shell, you can double-dredge: after the first coating, briefly dip back into buttermilk and then back into the dry mixture.

Fry oysters

Carefully lower a single layer of coated oysters into the hot oil (do not overcrowd; fry no more than 6–8 at a time depending on pot size). Fry 2.5–4 minutes or until golden brown and crisp, turning once if needed. Use a slotted spoon or spider to remove oysters and transfer to a wire rack set over a baking sheet or paper towels to drain. Season immediately with a light pinch of salt. Repeat with remaining oysters, keeping finished oysters warm in a 200°F (95°C) oven if desired.

For the Remoulade

While oysters fry, whisk together 1/2 cup mayonnaise, 1 teaspoon Creole or Dijon mustard, 1 tablespoon lemon juice, 1 teaspoon hot sauce, 1/2 teaspoon Worcestershire sauce, 1 teaspoon chopped capers, 1 tablespoon finely minced shallot, 1 tablespoon chopped parsley, 1/4 teaspoon paprika, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl. Taste and adjust seasoning—add more hot sauce or lemon if you prefer more tang. Refrigerate until ready to assemble.

For the Sandwiches

Prepare bread: split each roll or loaf lengthwise and lightly spread a thin layer of the softened butter on both cut sides. Optionally toast the cut sides in a skillet or under a broiler for 1–2 minutes until lightly golden. This adds flavor and helps keep the bread from becoming soggy.

Assemble: spread about 1 tablespoon of remoulade on the bottom half of each roll. Layer 1/2 cup shredded lettuce and sliced tomatoes (about 2–3 tomato slices) over the sauce. Arrange 4 fried oysters per sandwich (for 6 sandwiches use 24 oysters total), piling them slightly overlapping. Drizzle an additional teaspoon of remoulade over the oysters if you like extra sauce, and add pickles if using.

Finish and serve: close sandwiches with the top half of the roll, press lightly, and serve immediately while oysters are hot and crisp. Provide extra remoulade and hot sauce at the table.
