Marinate conch
If using fresh conch, slice or tenderize and chop into small dice (about 1/4"). Place chopped conch in a bowl. Add 1 tsp soy sauce or Worcestershire, 1 tsp oil and 1/4 tsp black pepper. Toss to coat and let sit 10–15 minutes while preparing other ingredients.

Prepare aromatics and dry mix
In a medium bowl, whisk together 1 cup flour, 1/4 cup cornmeal, 1 tsp baking powder, 1 tsp sugar, 1 tsp salt and 1/2 tsp black pepper until evenly combined. Stir in minced garlic, sliced scallions, diced red bell pepper and chopped parsley so they are distributed through the dry mix.
Combine wet ingredients
In a separate small bowl, beat 1 large egg with 1/2 cup milk, 1 tsp hot sauce (if using) and 1 tbsp lime juice until smooth.
Make batter
Add the wet mixture to the dry mix and stir until just combined — a thick, spoonable batter. Fold in the marinated chopped conch, ensuring pieces are evenly coated. If batter seems too stiff, add milk 1 tablespoon at a time until you reach a drop-from-spoon consistency (thicker than pancake batter, thinner than dough). Taste and adjust salt or hot sauce.
Dredge & Frying
Heat oil
Pour about 3–4 cups of oil into a heavy-bottomed saucepan or deep fryer so oil depth is about 2". Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a teaspoon of batter into the oil — it should sizzle and rise steadily without browning immediately.
Dust conch lightly
Lightly toss any excess clumps of conch in 1/4 cup flour to prevent sticking and help bind in the batter. Shake off excess flour.
Fry fritters
Working in small batches (do not overcrowd), drop heaping tablespoons of batter into the hot oil, about 1" apart. Fry for 2.5–3.5 minutes, turning once, until golden brown and cooked through. Internal fritter temperature should be hot and fritters should be crisp. Remove with a slotted spoon and drain on a wire rack or paper towels. Maintain oil temp at 350°F; reduce heat slightly if they are browning too quickly.
Keep warm
Place finished fritters in a single layer on a baking sheet in a 200°F (95°C) oven to keep warm and crisp while frying remaining batter.
Quick Dipping Sauce
Make sauce
Whisk together 1/2 cup mayonnaise, 2 tbsp ketchup, 1 tsp lime juice, 1/2 tsp hot sauce (or minced scotch bonnet if using very carefully) and 1/8 tsp salt until smooth. Taste and adjust acidity or spice; thin with a teaspoon of water or more lime juice if desired.
Serve
Arrange conch fritters on a platter with the dipping sauce on the side. Garnish with extra chopped parsley and lime wedges. Serve immediately while hot and crisp.
