House Caesar salad

Assemble salad
In a large bowl, add the chopped romaine lettuce. Drizzle the Caesar dressing over the lettuce (about 4 tablespoons). Toss gently until leaves are evenly coated. Add crushed croutons and grated Parmesan, then toss once more to combine. Taste and add 1 teaspoon lemon juice and up to 1 teaspoon black pepper if desired.

Warm or shred pre-cooked chicken
If using refrigerated cooked chicken breast, warm gently in a skillet over medium-low heat for 2–3 minutes with a small splash of water or chicken broth, or microwave covered for 30–45 seconds until warmed through. Slice or shred to yield about 2 cups. Season lightly with a pinch of black pepper.

Warm tortillas
Warm the tortillas to make them pliable: heat a dry skillet over medium-high and warm each tortilla 15–20 seconds per side, or microwave a stack of tortillas covered with a damp paper towel for 20–30 seconds. If desired, brush each tortilla lightly with the 1 teaspoon olive oil or melted butter for extra flavor.

Build the wrap
Lay a warm tortilla flat. In the center, place about 1/2 cup of the house Caesar salad (lettuce lightly packed so it doesn't overdry the wrap). Top with 1/2 cup warmed chicken. Sprinkle roughly 3/4 tablespoon of the cheese blend over the chicken. Add any optional add-ins (1 slice of bacon chopped, 2–3 slices of tomato, or a few avocado slices) if using. Season with a pinch of black pepper to taste.

Fold and grill (optional)
Fold the sides of the tortilla over the filling and roll tightly from the bottom to form a wrap. To seal and lightly crisp, place the wrap seam-side down in a preheated skillet or panini press over medium heat. Cook 1–2 minutes per side until golden and cheese melts slightly. Press gently with a spatula or weight.

Serve
Cut each wrap in half on the bias. Serve immediately while warm, with extra Caesar dressing on the side if desired.
