    preheat and prepare

    Place a pizza stone or baking sheet on the middle rack and preheat oven to 500°F (260°C) for at least 30 minutes. If using a pizza peel, dust with a little flour or semolina. Let dough sit at room temperature 20–30 minutes if refrigerated.

    Stretch or roll the dough to a 12-inch round on a lightly floured surface. Transfer to a peel or parchment-lined sheet. Brush the surface lightly with 1 tablespoon extra-virgin olive oil, leaving a 1/2-inch edge for the crust.

    prepare ricotta dollops

    Season the ricotta with a pinch (about 1/8 tsp) of salt and a few grinds of black pepper. Use a spoon to drop six roughly even dollops of ricotta across the stretched dough, spacing them so they will melt into small islands.

    Distribute the torn fresh mozzarella evenly across the pizza, placing pieces between and slightly over the ricotta dollops so the cheeses will meld as they bake.

    In a small skillet over medium heat, add the Italian sausage (removed from casing) and break it up with a spoon. Cook until browned and cooked through, about 6–8 minutes. Drain excess fat and blot on paper towel if very greasy. Scatter the crumbled sausage evenly over the cheese-covered dough.

    If bacon is not pre-cooked, pan-fry or bake until crisp, then chop into bite-sized pieces. Sprinkle the chopped smoked bacon evenly over the pizza along with the sausage.

    Slice the house-roasted red pepper into 1/2-inch strips and arrange them across the pizza. Sprinkle the minced garlic lightly over the toppings (avoid large concentrated areas to prevent burning). Scatter the fresh thyme leaves evenly.

    season and bake

    Sprinkle the pizza with 1/2 teaspoon fine sea salt, 1/4 teaspoon freshly ground black pepper, and 1 teaspoon red pepper flakes (adjust to taste). Slide the pizza onto the preheated stone or place the sheet in the oven. Bake at 500°F (260°C) for 8–12 minutes, until the crust is golden and cheese is bubbling and slightly browned.

    Remove pizza from oven and let rest 1–2 minutes. Drizzle the local raw honey evenly over the hot pizza (about 2 teaspoons total) so it melds with the cheeses and meats. If desired, add an extra pinch of red pepper flakes and a few thyme leaves for garnish. Slice and serve immediately.
