    Activate and combine

    In a large mixing bowl combine warm water and warm milk (total about 95–110°F / 35–43°C). Stir in the sugar and sprinkle the instant yeast over the surface. Let sit 5 minutes until foamy (if still inactive after 10 minutes, yeast may be old; replace).

    Build the dough

    Add melted butter and 1 teaspoon olive oil to the yeast mixture. Whisk briefly. Add 2 cups of the flour and the salt; stir with a wooden spoon until combined. Gradually add remaining flour, 1/2 cup at a time, stirring until the dough comes together and is slightly sticky but pulls away from the bowl.

    Knead

    Turn the dough onto a lightly floured surface and knead for 6–8 minutes until smooth, elastic, and slightly tacky. (If using a stand mixer, knead with the dough hook on medium for 5–6 minutes.) Add a tablespoon of flour only if dough is excessively sticky.

    First rise

    Lightly oil a clean bowl with the remaining 1 teaspoon olive oil. Place the dough in the bowl, turning once to coat. Cover with plastic wrap or a damp towel and let rise in a warm draft-free spot for 45–60 minutes, or until doubled in size.

    Prepare oven and pan

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.

    Deflate and portion

    Punch down the risen dough to release air. Turn onto a lightly floured surface and divide into 24 equal pieces for 8–10 inch breadsticks (or fewer for larger sticks). Roll each piece into a smooth ball, then roll each ball into a 10–12 inch long stick about 1/2 inch thick. Keep shaped sticks covered with a towel while working to prevent drying.

    Second rise

    Place shaped sticks on the prepared baking sheet about 1 inch apart. Cover loosely and let rest 15–20 minutes to relax and puff slightly.

    Bake

    Bake in the preheated oven for 12–15 minutes, or until the sticks are golden brown on top and set. Rotate the pan halfway through baking for even color.

    Make garlic-parsley butter

    While the sticks bake, combine the 3 tablespoons melted butter for brushing with the minced garlic and chopped parsley in a small heatproof bowl. (If you prefer a milder garlic flavor, gently warm the mixture for 20–30 seconds in the microwave to mellow the raw edge.)

    Brush and season

    When breadsticks come out of the oven, immediately brush them generously with the garlic-parsley butter so it soaks in. Sprinkle grated Parmesan evenly over the hot sticks, then finish with a light pinch of coarse sea salt and the optional sesame or poppy seeds if using.

    Rest and serve

    Allow breadsticks to cool on a wire rack for 5 minutes so the butter sets slightly. Serve warm with marinara, olive oil, or as desired.
