Prepare the Spice Mixture

In a small bowl, mix together the Cajun seasoning, garlic powder, paprika, salt, and black pepper. This will be your blackening spice mix.

Marinate the Redfish

Brush the redfish fillets with olive oil and lemon juice. Then sprinkle the blackening spice mix generously on both sides of the fillets, ensuring they are well-coated.

Preheat the Skillet

Heat a cast-iron skillet over high heat until it's very hot (about 5 minutes). You want to create a searing effect when the fish is added.

Cook the Redfish

Add a tablespoon of olive oil to the skillet. Carefully place the marinated redfish fillets in the skillet. Cook for about 3-4 minutes on one side until dark and charred. Flip and cook for another 3-4 minutes on the other side. The fish should be flaky and cooked through.

Serve

Remove the cooked redfish from the skillet and let it rest for a minute. Serve the blackened redfish over a bed of cooked rice, garnished with fresh parsley.
