Cocktail

1

Chill glass

Place a coupe or martini glass in the freezer or fill it with ice water to chill while you prepare the drink (about 3–5 minutes).

2

Dry shake (if using egg white)

If you chose to use egg white for a silky texture, add the egg white, vodka, peach schnapps, orange juice, cranberry juice, lime juice, and simple syrup to a cocktail shaker (no ice). Secure the lid and dry-shake vigorously for 15–20 seconds to emulsify and create foam.

3

Wet shake

Add the ice to the shaker (about 4–6 medium cubes or ~1 cup). If you did a dry shake, open the shaker and add ice now. If not using egg white, add all cocktail ingredients and ice. Secure the lid and shake hard for 12–15 seconds until the outside of the shaker is very cold and slightly frosty.

4

Strain

Discard the ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne and fine mesh strainer (this removes small ice shards and any egg white solids).

5

Garnish & serve

Express an orange twist over the drink (pinch the peel to release oils) and drop it in, or add a thin peach slice on the rim. Optionally tuck a mint sprig beside the garnish. Serve immediately.
