Preheat and prepare pans

Preheat the oven to 350°F (175°C). Lightly grease and flour an 8-inch round cake pan (or line with parchment) and set aside.

In a medium bowl, whisk together the all-purpose flour, baking powder, and fine salt until evenly combined. This ensures even rising and no pockets of leavening.

In a separate large mixing bowl, whisk together the granulated sugar and eggs until pale and slightly thickened, about 1–2 minutes by hand (or 30 seconds with a mixer). Add the melted butter, whole milk, and vanilla extract and whisk until homogeneous.

Gently fold the dry ingredients into the wet ingredients in two additions using a spatula. Fold just until no dry streaks remain — do not overmix to keep the cake tender.

Pour the batter into the prepared pan, smooth the top, and bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached and the top is lightly golden.

Remove the cake from the oven and let it rest in the pan for 10 minutes. Run a knife around the edge, invert onto a cooling rack, and allow to cool completely (about 45 minutes) before assembling with the filling.

Relaxing Lemon-Cream Filling

While the cake cools, prepare the lemon-cream filling. In a medium bowl, beat the softened cream cheese with a spatula or hand mixer on low until smooth and free of lumps.

Add the powdered sugar, lemon zest, and lemon juice to the cream cheese and beat on low until evenly combined and smooth. Taste and adjust lemon to preference (add up to 1 tsp more lemon juice for brighter flavor).

In a small bowl, whip the heavy cream to soft peaks (about 30–45 seconds with a whisk or a mixer). Fold the whipped cream gently into the cream cheese mixture in two additions until light and spreadable. Keep chilled until ready to use.

If serving as a layered cake: slice the cooled cake horizontally into two even layers using a serrated knife. Spread about two-thirds of the lemon-cream filling evenly over the bottom layer, press the top layer into place, then spread the remaining filling on top. If serving as a single-layer cake: spread the entire filling over the top, allowing some to droop slightly over the edges for a rustic look.

Calming Honey-Cardamom Drizzle & Finish

Make the drizzle: in a small saucepan, combine the mild honey and water and warm gently over low heat until the honey thins slightly (about 1–2 minutes). Remove from heat and stir in the ground cardamom. Taste and add a pinch more cardamom if you prefer a more aromatic finish. Let cool slightly so it’s pourable but not hot.

Arrange the assembled cake on a serving plate. Using a spoon, drizzle the honey-cardamom syrup over the top of the cake, letting some naturally run down the sides. Use as much or as little as you like — the recipe amount yields a light, fragrant glaze.

Scatter the toasted sliced almonds over the top so they stick to the drizzle. Garnish with fresh mint leaves for color and a cooling aroma. Chill the cake for 20–30 minutes before slicing to let the filling set slightly and the drizzle settle.

Slice and serve: use a sharp knife warmed briefly under hot water and wiped dry for clean slices. Store any leftovers covered in the refrigerator for up to 3 days.
