Prepare and measure

Chill a coupe or Nick & Nora glass by filling it with ice and set aside. Measure the whisky or bourbon, lemon juice, simple syrup, green chartreuse, and the egg white into a cocktail shaker (or mixing tin).

Dry shake

Without ice, seal the shaker and shake vigorously for 20–30 seconds. The goal is to emulsify the egg white and create a thick, frothy texture.

Wet shake

Add a generous handful of ice to the shaker (about 1 cup). Shake again vigorously for 12–15 seconds to chill and properly dilute the cocktail.

Strain

Dump the ice from the chilled glass. Double-strain the cocktail into the chilled glass using a fine mesh strainer on top of the cocktail strainer to remove small ice shards and any coagulated egg bits, producing a silky foam head.

Finish and garnish

Add 2 dashes of Angostura bitters directly onto the foam. Using a toothpick or cocktail stick, gently drag the bitters to create a small pattern if desired. Express a lemon twist over the drink to release oils, rub the rim with the twist, then drop it into the glass as garnish.

Serve

Serve immediately while the foam is fresh. Advise guests that the drink contains raw egg white; use pasteurized eggs if preferred.
