Prepare shell
If using pre-baked biscuit or cracker shells, inspect each for cracks and set 6 shells on a serving platter. If shells are thicker than desired, gently warm in a 300°F (150°C) oven for 3–4 minutes to crisp; let cool.
Make filling
In a medium bowl combine 1 cup ricotta cheese, 1 cup Greek yogurt, 2 tablespoons honey, 1 teaspoon vanilla extract, 1 teaspoon lemon zest, 1 teaspoon lemon juice and 1/8 teaspoon salt. Whisk or beat until smooth and slightly airy, about 1–2 minutes. Taste and adjust honey or lemon as desired.
Add espresso and chocolate
Gently fold 1 teaspoon finely ground espresso (or very finely ground coffee) and 30 g chopped dark chocolate into the filling so the coffee is distributed and the chocolate is slightly incorporated but still gives texture.
Assemble slots
Using a small spoon or piping bag, portion roughly 2–3 tablespoons of filling into each of the 6 shells, smoothing the top lightly. Reserve a little filling for topping if desired.
Add toppings
Sprinkle about 3 tablespoons chopped toasted hazelnuts evenly across the filled shells. Scatter 3 tablespoons fresh berries across the slots (roughly a few berries per shell). Garnish each slot with a mint leaf.
Finish and dust
If desired, lightly dust the assembled slots with 1 teaspoon cocoa powder for a final touch. Refrigerate for 10–15 minutes if you prefer chilled slots, or serve immediately to keep shells crisp.
