Method
Core Cocktail
Measure and combine
Add aged rum, Aperol, mezcal, fresh lime juice, honey syrup, and orange bitters to the cocktail shaker.
Dry shake (if using egg white)
If using egg white, add it now and perform a dry shake (no ice) vigorously for 12–15 seconds to emulsify and build a silky foam.
Shake with ice
Add large ice cubes to the shaker and shake vigorously for 12–18 seconds until the shaker is very cold to the touch and properly diluted.
Double strain
Using the hawthorne and then a fine strainer, strain the cocktail into a chilled rocks glass over one large ice cube (or into a coupe if omitting ice).
Sparkle & Finish
Top the strained cocktail with 1 ounce of chilled sparkling wine, poured gently down the side to preserve the foam and create a bright effervescence.
Lightly sprinkle the smoked sea salt across the top of the foam or ice to introduce a subtle savory note. Grate a small amount of fresh orange zest over the top for aromatic lift.
Garnish with a dehydrated orange wheel on the rim or floated on the foam. Serve immediately.
