Core Cocktail

Method

Core Cocktail

1

Measure and combine

Add aged rum, Aperol, mezcal, fresh lime juice, honey syrup, and orange bitters to the cocktail shaker.

2

Dry shake (if using egg white)

If using egg white, add it now and perform a dry shake (no ice) vigorously for 12–15 seconds to emulsify and build a silky foam.

3

Shake with ice

Add large ice cubes to the shaker and shake vigorously for 12–18 seconds until the shaker is very cold to the touch and properly diluted.

4

Double strain

Using the hawthorne and then a fine strainer, strain the cocktail into a chilled rocks glass over one large ice cube (or into a coupe if omitting ice).

Sparkle & Finish

5

Top the strained cocktail with 1 ounce of chilled sparkling wine, poured gently down the side to preserve the foam and create a bright effervescence.

6

Lightly sprinkle the smoked sea salt across the top of the foam or ice to introduce a subtle savory note. Grate a small amount of fresh orange zest over the top for aromatic lift.

7

Garnish with a dehydrated orange wheel on the rim or floated on the foam. Serve immediately.

Serving & Notes

8

Presentation: Serve as a featured cocktail in the 'Hot Games' section — it pairs well with smoky, spicy snacks and makes a bold opening drink.

9

Allergies & substitutions: Substitute aquavit or a botanical gin for rum for a different aromatic profile; omit egg white for a vegan version and add 0.25 oz aquafaba instead.
