Method
Base Batter
Preheat and prepare pan
Preheat oven to 350°F (175°C). Lightly grease a 9-inch square or 9-inch round baking pan with vegetable oil or nonstick spray and line with parchment paper leaving an overhang for easy removal.
Whisk dry ingredients: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine sea salt until evenly combined.
Combine wet ingredients: In a separate large bowl, whisk the whole milk, eggs, melted butter, and vanilla extract until smooth and slightly frothy.
Make the batter: Pour the dry ingredients into the wet and fold with a silicone spatula until just combined. Do not overmix — a few small streaks of flour are okay. The batter should be moderately thick but pourable; if too thick, stir in up to 1–2 tablespoons milk.
EBET Suite Filling & Layers
Prepare the spiced brown-sugar spread: In a small bowl, cream together the softened butter and 1/2 cup brown sugar until smooth. Stir in ground cinnamon and the cooled espresso until the mixture becomes spreadable but still holds some body. If it becomes too loose, chill briefly in the refrigerator (5–10 minutes).
Layer the batter and filling: Pour about half of the prepared batter into the prepared pan and spread it into an even layer with a spatula. Drop spoonfuls (about 1 tablespoon each) of the brown-sugar spread over the batter in an even grid. Sprinkle half of the dark chocolate chips and half of the chopped toasted pecans over the top of that layer.
Top layer: Spoon the remaining batter over the filling islands. It’s OK if batter doesn’t completely cover every dollop — the filling will swirl during baking. Scatter the remaining dark chocolate chips and pecans across the top.
Optional swirl: Using a thin knife or skewer, gently swirl the top so some of the brown sugar spread peeks through in streaks, creating a marbled effect.
Bake and Finish
Make the finishing sauce
While the cake rests, make a quick brown-sugar cream sauce: In a small saucepan over low heat, combine the heavy cream, 2 tablespoons brown sugar, and 1 tablespoon butter. Warm gently, stirring until sugar dissolves and the butter melts. Bring just to a simmer for 30–60 seconds, then remove from heat and stir in 1/2 teaspoon vanilla extract. Taste and add flaky sea salt if desired for contrast.
