Prepare base gel

If using powdered or gelatin-based gel that needs activation, follow package instructions but finish with the lemon juice for brightness. Transfer the mixture to a shallow container (about 8x8 in or similar) and chill in the refrigerator until slightly set but still pourable, about 15–20 minutes.

Make dragon fruit purée
Place 1 cup dragon fruit flesh and 1 tablespoon powdered sugar into a blender or food processor. Purée until completely smooth. If the purée is too thick to swirl, add up to 1 teaspoon water and pulse until you reach a drizzling consistency. Taste and adjust sweetness if necessary.
Create the swirl
Remove the slightly set base gel from the refrigerator. Using a spoon or squeeze bottle, drizzle the dragon fruit purée over the surface in lines or concentric circles. Use a skewer or knife to drag through the purée and base to create a marbled 'swirl' effect reminiscent of dragon scales. Do this quickly so the base is still malleable. Return to refrigerator to set firmly, about 20–30 minutes.

In a small bowl, combine 1/2 cup puffed rice (or crisped quinoa), 1 teaspoon honey, and 2 tablespoons finely chopped roasted almonds. Stir briefly until the honey lightly coats the crisps and nuts. If the honey is very thick, warm it 5–10 seconds in the microwave to loosen before mixing.

Return to refrigerator for 5–10 minutes to let the slots settle.

Before serving, sprinkle 1 teaspoon lime zest evenly over the gel. Using a fine brush, dust the edges of each slot lightly with edible gold dust if using (use sparingly). Place micro mint leaves on or beside each crunchy slot (roughly one leaf per slot, total 6 pieces). Chill the finished dish for 5 minutes more if needed and serve cold.
