Base Components

Method

Prepare Batter

1

Preheat and combine dry

Preheat the oven to 350°F (175°C). In a large bowl whisk together 2 cups all-purpose flour, 3/4 cup granulated sugar, 2 tsp baking powder and 1/2 tsp salt until evenly combined.

2

Combine wet

In a separate medium bowl whisk 1 cup whole milk, 2 large eggs, 1/4 cup melted unsalted butter and 1 tsp vanilla extract until smooth.

3

Make batter

Pour the wet ingredients into the dry ingredients and stir with a spatula just until combined and no large streaks of flour remain. Do not overmix; a few small lumps are fine.

Assemble Slots

4

Prepare pan

Lightly oil or spray a 12-cup muffin tin (or use a rectangular mini-loaf or slot-style pan) with 2 tbs neutral oil or nonstick spray. This recipe yields about 10–12 slot cakes depending on pan size.

5

Fill bases

Spoon batter into prepared pan cups to fill each about 1/3 full (reserve some batter for topping).

6

Add fillings

Create three distinct slot varieties as you fill: for Chocolate-Hazelnut slots, sprinkle about 1 tsp dark chocolate chips and 1 tsp chopped roasted hazelnuts into each selected cup. For Raspberry-Jam slots, add 1 tsp raspberry jam into the center of chosen cups. For Plain slots for dusting, leave as-is. Use roughly 4 cups for chocolate-hazelnut, 4 for raspberry, and the remainder plain or mix as desired.

7

Top with batter

Spoon remaining batter over each filled cup to cover fillings and reach about 3/4 full.

Bake and Finish

8

Bake

Bake in the preheated 350°F (175°C) oven for 15–20 minutes, or until the slot tops are golden and a toothpick inserted into the center (avoiding any jam pockets) comes out clean or with a few moist crumbs.

9

Cool

Allow the slot cakes to cool in the pan for 5–7 minutes, then transfer to a wire rack to cool completely to avoid jam seepage.

10

Garnish

Dust cooled slot cakes lightly with 2 tbs powdered sugar. For the chocolate-hazelnut slots, sprinkle remaining chopped hazelnuts and a few chocolate chips on top. For raspberry slots, top with fresh raspberries and a small spoonful of reserved jam if desired. Optionally add 1/4 cup toasted oat flakes to any slots for extra crunch.

11

Serve

Arrange the slots on a platter and serve at room temperature. They keep in an airtight container at room temperature for up to 2 days or refrigerated for up to 4 days (bring to room temperature before serving).
