Prepare and preheat

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan lightly and line the bottom with parchment if desired for easier removal.

Dry ingredients

Whisk together the all-purpose flour, baking powder, and salt in a medium bowl until combined. Set aside.

Beat eggs and sugar

In a large mixing bowl, beat the room-temperature eggs on medium-high speed until pale and thick, about 5–7 minutes. Gradually add the granulated sugar while continuing to beat until the mixture is light, voluminous, and ribbon-like when the beaters are lifted.

Add milk and vanilla

Reduce mixer to low speed and add the 1/4 cup whole milk and 1 teaspoon vanilla extract, mixing just to combine.

Fold in dry ingredients

Sift the dry ingredients over the egg mixture (or sprinkle) and gently fold with a rubber spatula in two or three additions. Work carefully to preserve as much air as possible; stop when no streaks of flour remain.

Bake

Pour the batter into the prepared 9x13-inch pan and smooth the top. Bake in the preheated oven until the cake is golden and springs back slightly to the touch and a toothpick inserted into the center comes out clean, about 20–25 minutes.

Cool slightly

Remove the cake from the oven and let it cool in the pan on a wire rack for 10–15 minutes. Do not unmold; keep it in the pan for soaking.

Prepare milk mixture

While the cake bakes or cools, combine the sweetened condensed milk (14 oz), evaporated milk (12 oz), 1 cup whole milk (or half-and-half for a richer result), and 1 teaspoon vanilla extract in a medium bowl or large measuring cup. Whisk until smooth and homogeneous.

Poke cake

Using a skewer, fork, or the handle of a wooden spoon, poke holes all over the warm cake about 1/2 inch apart to create channels for the milk mixture to soak in.

Pour the soak

Slowly pour the milk mixture evenly over the warm cake, starting at the edges and finishing in the center. Pour gradually so the liquid has time to absorb rather than run off. Use a spatula to gently spread any excess along the surface.

Chill to absorb

Cover the pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the milks to fully penetrate the cake and for flavors to meld.

Chill equipment

Place the mixing bowl and beaters in the refrigerator for 10–15 minutes before whipping to help the cream whip faster and hold structure (optional but recommended).

Whip cream

Pour the cold heavy cream (1.5 cups) into the chilled bowl. Add the powdered sugar (1/4 cup) and 1 teaspoon vanilla extract. Beat on medium-high speed until soft to medium peaks form — the cream should be fluffy but still spreadable. Avoid overbeating.

Spread topping

Remove the cake from the refrigerator. Spread the whipped cream evenly over the chilled, milk-soaked cake using an offset spatula or knife.

Garnish and Serve

Lightly dust the whipped top with ground cinnamon if using. Scatter fresh berries and/or toasted coconut flakes over the top as desired.

Slice and serve

For clean slices, run a sharp knife under hot water, dry it, then slice the cake into squares (12 generous servings from a 9x13). Serve chilled. Leftovers keep well, covered, in the refrigerator for up to 3–4 days.
