Rinse and sort

Spread the dried large red beans on a tray or bowl and remove any debris or damaged beans. Rinse thoroughly under cool running water.

Place the rinsed beans in a large bowl and cover with 8 cups of water. Soak at room temperature for 6–8 hours or overnight. For a quicker method, use hot water and soak 1–2 hours.

Drain and rinse

After soaking, drain the beans and rinse under cool water. This reduces gas-producing sugars and shortens cooking time.

Simmer beans

Transfer drained beans to a large pot. Add 6 cups fresh water and 2 bay leaves. Bring to a boil over high heat, then reduce to a gentle simmer. Skim any foam from the surface with a spoon. Simmer uncovered for 45–60 minutes until beans are tender but not falling apart; timing depends on bean age. Check for doneness starting at 40 minutes.

Reserve cooking liquid

When beans are tender, reserve about 1 cup of the cooking liquid for thinning the final dish if needed. Remove and discard bay leaves. Keep beans in the pot on very low heat while you prepare the aromatics, or drain and set aside if you prefer to finish the dish in a separate pan.

While the beans cook, prepare the aromatics: finely chop the onion, dice the carrot and celery, mince the garlic, and dice the bell pepper if using.

In a large skillet or the same pot (if there is room), heat 2 tbs oil over medium heat until shimmering. Add the onion, carrot and celery. Cook, stirring occasionally, until softened and translucent, about 6–8 minutes.

Add the diced bell pepper and cook 2–3 minutes more until softened. Stir in the minced garlic and cook 30–60 seconds until fragrant.

Oil, Seasoning & Acid

Add 2 tbs tomato paste to the softened vegetables and cook 1–2 minutes, stirring constantly, until the paste darkens slightly—this develops a deeper flavor.

Stir in the smoked paprika, ground cumin and dried thyme. Cook 30 seconds to 1 minute to bloom the spices.

Add the cooked beans (with a little of the reserved cooking liquid or drained) to the skillet or return the aromatics to the pot with the beans. Stir gently to combine.

Season with 1.75 tsp salt and 0.5 tsp black pepper. Taste after mixing; you may need to adjust salt. If the mixture seems too thick, stir in up to 1 cup of reserved cooking liquid or water, a little at a time, until you reach a saucy but not soupy consistency.

Simmer together on low for 8–12 minutes to meld flavors, stirring occasionally. If the beans were drained and are very tender, 5 minutes is sufficient.

Stir in 1 tbs vinegar off the heat to brighten the flavors. Taste and adjust seasoning or add up to 1 tsp hot sauce if using.

Optional Finishes & Garnish

Remove from heat. Sprinkle chopped parsley or cilantro and sliced scallions over the beans. Serve warm as a side, over rice, with cornbread, or as a filling for tacos or burritos.

Store leftover beans in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat gently, adding reserved cooking liquid or water if needed to loosen.
