Prepare marinade
In a shallow dish or bowl combine 2 tbs olive oil, 2 tbs lemon juice, 2 tsp minced garlic, 2 tbs chopped parsley, 1 tsp smoked paprika, 1 tsp kosher salt and 1 tsp freshly ground black pepper. Whisk until emulsified.
Marinate fish
Pat the cod fillets (or prepared sardines) dry with paper towels. Place fish in the marinade, turning to coat both sides. Let sit at room temperature for 10–15 minutes (or refrigerate up to 30 minutes).
Grill fish
Remove excess marinade and place fish on the hot grill. Grill cod fillets 3–5 minutes per side depending on thickness, until opaque and easily flaked with a fork; sardines will take 2–3 minutes per side and should be crisp at the skin. Avoid flipping more than once. If using thicker fillets, close the grill lid for even cooking.
Potatoes
Boil potatoes
Place halved baby potatoes in a medium pot and add 1200 ml cold water and 1 tbs salt. Bring to a boil over high heat, then reduce to a gentle simmer. Cook until fork-tender, about 12–15 minutes depending on size.
Drain and finish
Drain potatoes well in a colander and return to the hot pot off the heat for 1 minute to let steam dry. Add 2 tbs unsalted butter and 1 tbs snipped chives, then gently toss to coat. Season with additional salt and pepper to taste.
Broccoli
Steam broccoli
Bring 240 ml water to a simmer in a small saucepan fitted with a steamer basket (or use a pot and colander). Add broccoli florets, cover, and steam until bright green and just tender, 4–6 minutes depending on size.
Finish broccoli
Transfer broccoli to a bowl. Drizzle with 1 tsp olive oil, add 1/2 tsp lemon zest if using, and season with salt and pepper to taste. Toss gently to combine.
