Warm cup and prepare machine
Preheat the cappuccino cup by rinsing it with hot water (about 60 ml) to keep the espresso from cooling too quickly. If using an espresso machine, run the group head for a second to stabilize temperature.
Dose and tamp decaf espresso
Measure and tamp enough decaf finely ground coffee for a double shot (usually 18–20 g depending on your basket). Aim for even distribution and a firm, level tamp.
Pull the shot
Brew a double shot of decaffeinated espresso (about 2 shots). Target extraction time around 25–30 seconds; yield roughly 40–50 ml total. If you prefer a milder cup, shorten yield slightly. Pour directly into the warmed cup.
Milk
Prepare milk and sweetener
Measure 6 oz (about 180 ml) of whole milk. If using sweetener, add 1 tsp sugar or 1 tsp simple syrup to the milk or to the espresso cup, depending on preference. Add 1/4 tsp vanilla extract to the milk if using.
Steam and texture milk
Purge the steam wand briefly. Submerge the wand tip just below the milk surface and start steaming to introduce microfoam: keep the pitcher at a slight angle and allow a soft hissing sound for the first 3–6 seconds to incorporate air. Then submerge the wand deeper to heat. Stop steaming when milk reaches 60–65°C (140–149°F) or when the pitcher becomes too hot to comfortably touch (around 65°C). Aim for a velvety, glossy microfoam with tiny bubbles and about 1–1.5 cm of foam at the top.
Swirl and settle
Tap the pitcher gently on the counter and swirl to break any larger bubbles and integrate foam and liquid milk into a smooth texture suitable for pouring latte art or a classic cappuccino top.
Assembly & Finish
Combine espresso and milk
Holding the cup with the espresso, pour the textured milk steadily into the center. Start with the pitcher higher to integrate milk with espresso, then lower the pitcher and move forward slightly to deposit the foam. Aim for roughly equal parts espresso, steamed milk, and foam (about 1/3 espresso, 1/3 milk, 1/3 foam).
Sweeten and flavor (optional)
If you added sugar to the milk earlier it will already be integrated. If you prefer a sweeter cup and didn't sweeten before, stir 1 tsp sugar or simple syrup into the prepared cappuccino to taste.
Garnish and serve
Dust the foam lightly with cocoa powder or ground cinnamon (about 1 tsp) for aroma and presentation. Serve immediately while hot.
