Prepare the mozzarella
Drain the buffalo mozzarella and pat dry with paper towels. Cut the block into 16 long stick-shaped pieces roughly 3–4 inches long and 3/4 inch thick. Lay on a tray lined with parchment and freeze uncovered for at least 30 minutes — this prevents melting during frying.
Set up breading stations
Place the flour and cornstarch in a shallow bowl and whisk together with 1/2 teaspoon salt and 1/4 teaspoon black pepper. In a second shallow bowl, whisk the eggs with the milk until smooth. In a third bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, and remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper; mix thoroughly.
Double-coat the sticks
Working one at a time, dredge a frozen mozzarella stick in the flour mixture, shaking off excess. Dip into the egg wash, then press into the breadcrumb mixture to coat fully. For extra insurance against leaking, return each stick to the egg wash a second time and finish with another layer of breadcrumbs, pressing firmly to adhere. Place coated sticks on a parchment-lined tray and freeze for 30 minutes to 1 hour — this helps set the coating.
Heat oil
Pour vegetable oil into a deep, heavy skillet or a deep fryer to a depth of about 2–3 inches. Heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of breadcrumbs into the oil — it should sizzle and brown in about 30–45 seconds.
Fry the sticks
Fry in small batches so the oil temperature remains steady. Fry each batch of 3–4 sticks for about 60–75 seconds, turning once, until golden brown. Do not over-fry — extended time will cause the cheese to burst out. Use a slotted spoon to transfer cooked sticks to a wire rack set over a baking sheet or paper towels to drain. If the coating shows signs of splitting, work colder and reduce fry time.
Keep warm
If making multiple batches, keep finished sticks in a single layer on a sheet in a 200°F (95°C) oven for up to 15 minutes while you finish frying.
Buffalo Sauce (Hot or Mild)
While sticks are frying or resting, make the sauce: melt the butter in a small saucepan over low heat. Add the hot sauce, honey, white vinegar, Worcestershire, and optional hot chili paste or extra hot sauce if you want more heat. Whisk until smooth and warmed through, about 2–3 minutes. Taste and adjust: add cayenne for extra heat and 1/4 teaspoon salt if needed. Keep warm on very low heat or transfer to a heatproof bowl.
To coat the sticks, place fried mozzarella sticks in a large bowl, pour the desired amount of warm buffalo sauce over them, and toss gently to glaze. Alternatively, leave sauce on the side for dipping to preserve crispiness.

Arrange buffalo-coated or plain-fried mozzarella wing sticks on a serving platter. Garnish with chopped fresh parsley and serve immediately with blue cheese and ranch dressings and celery sticks on the side.
Notes on texture and service: If you prefer maximum crispness, serve sauce on the side so guests can dip. For saucy 'wing-style' presentation, toss briefly (one or two gentle turns) in sauce right before plating to avoid sogginess.
