Soak (overnight or quick soak)
Rinse the dried black beans in a colander and remove any stones or damaged beans. For overnight soak: place beans in a bowl and cover with 4–6 cups of cold water, refrigerate and soak 8–12 hours. Drain and rinse before cooking. For quick soak: place rinsed beans in a pot, add 6 cups water, bring to a boil for 2 minutes, remove from heat, cover and let sit 1 hour, then drain and rinse.
Prep aromatics
Peel and smash the garlic cloves. Halve the onion (or roughly chop into large pieces). Measure out bay leaf, cumin, olive oil, salt and pepper.
Sauté aromatics (optional step for more flavor)
In a medium pot, heat the olive oil over medium heat. Add the smashed garlic and halved onion and sauté 3–4 minutes until aromatic and the onion edges begin to soften and color. Add the ground cumin and stir 30 seconds to bloom the spice. This step adds depth but you can skip it and add aromatics directly to the cooking liquid.
Cook the beans
Add the drained soaked beans to the pot with the sautéed aromatics (or add beans to a clean pot). Pour in 6 cups fresh water and add the bay leaf. Bring to a low boil, then reduce heat to maintain a gentle simmer. Partially cover the pot and simmer, stirring occasionally and skimming any foam that forms, until beans are tender, 60–90 minutes depending on age of beans and soaking method. Check liquid level during cooking and add up to 1–2 cups hot water if necessary to keep beans submerged.
Season toward the end
When the beans are nearly tender (about 10–15 minutes before they reach desired softness), stir in the salt and black pepper. Continue simmering until fully tender. Salting earlier can sometimes toughen skins; adding salt near the end yields more consistent tenderness.
Serve or store
Serve hot as a side, over rice, in tacos or salads. To store, cool to room temperature then refrigerate in an airtight container for up to 4–5 days, or freeze in portions for up to 3 months. Reheat gently, adding a splash of water if needed to loosen the liquid.
