Method

Veggie Patty Preparation

  1. 1

    Cook the Broccoli

Steam the broccoli florets until tender, about 5-7 minutes. Allow to cool slightly, then chop finely.

  2. 2

    Mix Ingredients

In a large bowl, combine the chopped broccoli, pecans, white cheddar, red onion, minced garlic, egg, breadcrumbs, salt, and black pepper. Mix until well combined.

  3. 3

    Form Patties

Divide the mixture into four equal portions and shape each portion into a patty.

  4. 4

    Cook Patties

Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.

Whipped Feta Preparation

  1. 5

    Blend Feta Mixture

In a food processor, combine the crumbled feta, cream cheese, olive oil, lemon juice, and salt. Blend until smooth and creamy.

Sun-Dried Tomato Jam Preparation

  1. 6

    Cook the Jam

In a small saucepan, combine the sun-dried tomatoes, balsamic vinegar, honey, and water. Cook over medium heat until the mixture thickens, about 10 minutes. Let it cool.

Assembly

  1. 7

    Assemble the Burger

Toast the Kaiser buns until golden brown. Spread a generous layer of whipped feta on each bottom bun, place a veggie patty on top, add a spoonful of sun-dried tomato jam, and finish with a handful of mixed greens. Top with the other half of the bun.
