Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Baking Dish
In a baking dish, drizzle 1 tablespoon of olive oil to coat the bottom of the dish.

Season the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

In a skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

Stir in the cherry tomatoes, spinach, and Kalamata olives to the skillet. Cook for about 3-4 minutes until spinach wilts and tomatoes soften.

Add dried oregano and stir well to combine. Remove from heat.

Spread the sautéed vegetable mixture evenly in the prepared baking dish. Lay the seasoned salmon fillets on top of the vegetables.

Drizzle the lemon juice over the salmon fillets and sprinkle fresh chopped basil on top.
