Main Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the Baking Dish

In a baking dish, drizzle 1 tablespoon of olive oil to coat the bottom of the dish.

  3. 3

    Season the Salmon

Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

  4. 4

    Sauté Garlic

In a skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

  5. 5

    Add Vegetables

Stir in the cherry tomatoes, spinach, and Kalamata olives to the skillet. Cook for about 3-4 minutes until spinach wilts and tomatoes soften.

  6. 6

    Season the Vegetables

Add dried oregano and stir well to combine. Remove from heat.

Assembly

  1. 7

    Combine Ingredients

Spread the sautéed vegetable mixture evenly in the prepared baking dish. Lay the seasoned salmon fillets on top of the vegetables.

  2. 8

    Add Lemon Juice and Basil

Drizzle the lemon juice over the salmon fillets and sprinkle fresh chopped basil on top.

Cooking

  1. 9

    Bake the Salmon

Cover the baking dish with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  2. 10

    Serve

Remove from oven, let it rest for a few minutes, then serve warm, garnished with additional fresh basil if desired.
