    Cook the Bacon

    In a large pot over medium heat, add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the pot and set aside, leaving the drippings in the pot.

    Sauté the Vegetables

    In the same pot with the bacon drippings, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Add Potatoes and Broth

    Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.

    Incorporate Corn and Sun-dried Tomatoes

    Once the potatoes are tender, add the sweet corn and chopped sun-dried tomatoes to the pot. Stir well to combine.

    Blend the Chowder

    Using an immersion blender, blend the chowder until smooth, or leave some chunks for texture. If using a regular blender, allow to cool slightly before blending in batches.

    Add Coconut Milk and Seasoning

    Stir in the coconut milk (or heavy cream), salt, black pepper, and thyme. Heat through for another 5 minutes.

Serving

    Serve the Chowder

    Ladle the chowder into bowls and garnish with chopped chives and crumbled bacon if desired. Serve warm.
