Cheese Dip

Method

Cheese Dip Preparation

  1. 1

    Prepare the Base

In a medium saucepan, combine the cream cheese and grated Parmesan cheese over low heat. Stir continuously until the cheeses are melted and well blended.

  2. 2

    Add Remaining Ingredients

Stir in the shredded Monterey Jack cheese, diced green chiles, diced tomatillo, minced garlic, chopped onion, chopped cilantro, salt, and black pepper. Continue to cook for an additional 5-7 minutes, stirring frequently until the mixture is creamy and heated through.

  3. 3

    Adjust Seasoning

Taste the queso and adjust seasoning with more salt and black pepper if needed. Keep warm on low heat while preparing the chips.

Tortilla Chips Preparation

  1. 4

    Cut and Fry Tortillas

Cut each flour tortilla into 6 wedges. Heat vegetable oil in a deep skillet or frying pan over medium-high heat. Once hot, carefully add the tortilla wedges in batches and fry until golden brown and crispy, about 2-3 minutes.

  2. 5

    Drain and Season

Using a slotted spoon, remove the chips from the oil and drain on paper towels. While still hot, sprinkle with salt to taste.
