Shrub Preparation

Make the Grapefruit Rosemary Shrub
In a medium saucepan, combine the fresh grapefruit juice, sugar, and rosemary sprigs. Heat over medium heat, stirring occasionally until the sugar dissolves completely.

Strain and Store
Once cooled, strain the shrub through a fine-mesh sieve into a clean bottle, discarding the rosemary. Seal the bottle and refrigerate for at least 24 hours to allow the flavors to meld.

Prepare the Glass
Run a grapefruit wedge around the rim of a glass. Dip the rim into coarse sea salt to create a salted rim.

Mix the Cocktail
In a cocktail shaker filled with ice, combine the prepared grapefruit shrub, fresh grapefruit juice, and Angostura bitters. Shake well to combine.

Strain the mixture into the prepared glass over fresh ice cubes. Top with ginger beer to fill the glass.
