Fries Preparation

    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to create fries.

    Soak the Potatoes

    Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle the house seasoning over them and toss to coat evenly.

House Seasoning Preparation

    Mix the Seasoning

    In a small bowl, combine garlic powder, onion powder, paprika, salt, and black pepper. Mix well and set aside.

Bacon Aioli Preparation

    Combine Ingredients

    In a mixing bowl, combine the mayonnaise, finely chopped bacon, minced garlic, and lemon juice.

    Season the Aioli

    Season with salt and black pepper to taste, mixing until all ingredients are well incorporated.
