Deviled Eggs

    Boil the Eggs

    Place the eggs in a pot and cover with cold water. Bring to a rolling boil over medium heat. Once boiling, cover the pot and remove from heat. Let sit for 12 minutes.

    Prepare Egg Yolks

    After 12 minutes, transfer the eggs to an ice bath to cool for at least 5 minutes. Once cooled, peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a mixing bowl.

    Mix Filling

    To the yolks, add mayonnaise, Dijon mustard, salt, black pepper, and paprika. Mash and mix until smooth and creamy.

    Fill Egg Whites

    Using a spoon or piping bag, fill the egg whites with the yolk mixture. Set aside.

Red Pepper Queso

    Prepare Queso

    In a saucepan over medium heat, combine cream cheese and milk. Stir until melted and combined.

    Add Cheese and Spices

    Gradually add the shredded cheddar cheese, stirring until melted. Add the roasted red bell pepper, garlic powder, chili powder, and salt. Mix thoroughly until smooth.

Salsa Verde

    Blend Salsa Verde

    In a blender or food processor, combine chopped tomatillos, jalapeño, cilantro, lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Assembly

    Assemble the Dirty Devils

    Top each filled egg half with a spoonful of red pepper queso, a dollop of salsa verde, and a swirl of sour cream. Garnish with fresh cilantro leaves and a sprinkle of paprika.
