Cake Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring until smooth.

Combine Wet Ingredients
In another bowl, whisk together the large eggs, egg yolks, and vanilla extract until well combined.

Combine All Mixtures
Slowly fold the melted chocolate mixture into the egg mixture. Then gently fold in the dry ingredients until just combined. Be careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.

Cool Slightly
Remove the ramekins from the oven and let them cool for 1-2 minutes before inverting onto plates.

Add Ice Cream
Top each lava cake with a scoop of vanilla ice cream. Optionally, add fresh berries around the cake for garnish.
