Method

For the Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Make the Batter

In a large bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

  3. 3

    Prepare the Egg Mixture

In another bowl, beat the egg and mix in the milk.

  4. 4

    Coat the Calamari

Dip each calamari ring into the egg mixture, then coat it in the flour mixture. Shake off any excess flour.

  5. 5

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

  6. 6

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in small batches. Fry for about 2-3 minutes until golden brown. Remove and drain on paper towels.

For the Marinara Sauce

  1. 7

    Sauté the Garlic

In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 8

    Simmer the Sauce

Add the crushed tomatoes, oregano, basil, salt, black pepper, and sugar to the saucepan. Stir to combine.

  3. 9

    Cook the Sauce

Bring the sauce to a simmer and reduce the heat to low. Let it cook for about 15-20 minutes, stirring occasionally.
